Green Tomato Salad


 
You'll need about 1,5kg green tomatoes, chopped

coursely. Cook 3 chopped onions in . cup olive oil

for about 10 mintes, stirring occasionally, until just

tender. Add the tomatoes, a cup of chicken stock and

5 cloves finely chopped garlic and cook, covered,

until the tomatoes are just tender. Stir in a slurp of

extra-virgin olive oil and season with fresh black

pepper and salt. Place in an attractive shallow bowl,

top with a cup of crubled feta cheese and chopped

dill or chives.
