This stew is full of the goodness that

the Mediterranean diet offers!


1 Kg Beef or Lamb meat, cut into cubes.

1 Onion sliced

3 Cloves Garlic chopped

4 Tomatoes, skinned and cubed

1 Brinjal slice and sprinkle salt over, let

stand for about ½ hour.

½ Green pepper

½ Red pepper

1 chilli

4 Baby marrows

2 Large potatoes, peeled and cubed

4 Tbsp Extra Virgin Olive oil

1 Cup Red Wine

Salt & Pepper

Warm olive oil in large pan, add onions,

and fry till nicely browned. Add garlic

and meat. Fry till meat is browned. Add

red wine, and water, and cook, covered,

till meat is soft.Add brinjals, red and

green peppers, and potato. Cook further

for about ½ hour, then add rest of ingredients,

and cook another ½ hour or until ready.
